Cooking with Aunty D.
With this beautiful No-Bake Blueberry Cheesecake, you’ll never have to leave home to buy a slice from the store ever again! Get mixing!
Ingredients:
For Base-
- Biscuit 200 g
- Lurpak Butter (melted) 100 g
- Sugar 1 tbsp
For cold set-
- Cream cheese 300 g
- Icing sugar 110 g
- Gelatin 2 tsp
- Lemon juice 1 tsp
- Blueberries 1 cup (227 g)
- Sugar 2 tbsp
- Fresh cream 250 ml
- Sour cream 1/4 cup (62.5 ml)
Method:
- Crush biscuit and melt with melted Lurpak butter. Mix and add sugar and make the base for the cheesecake.
- Mix cream cheese and icing sugar until it has a creamy consistency.
- Add sour cream and gelatin mix using an electric mixer.
- Whip the fresh cream to a soft peak and fold into cream cheese mixture.
- Divide the mixture into two.
- Add sugar and lemon juice to the blueberries and microwave for 1 minute. Make into a jam.
- Fold blueberry mixture into one half of the cream cheese mixture.
- Pour this combined mixture on top of the biscuit layer. Smooth the top with a palette knife and place in refrigerator for at least 1 hour.
- After, pour the remaining half of the cream cheese mixture, smoothen it out and refrigerate for at least 2 hours.
