No-Bake Blueberry Cheesecake

With this beautiful No-Bake Blueberry Cheesecake, you’ll never have to leave home to buy a slice from the store ever again! Get mixing!


Ingredients:

For Base-

  • Biscuit 200 g
  • Lurpak Butter (melted) 100 g
  • Sugar 1 tbsp

For cold set-

  • Cream cheese 300 g
  • Icing sugar 110 g
  • Gelatin 2 tsp
  • Lemon juice 1 tsp
  • Blueberries 1 cup (227 g)
  • Sugar 2 tbsp
  • Fresh cream 250 ml
  • Sour cream 1/4 cup (62.5 ml)

Method:

  1. Crush biscuit and melt with melted Lurpak butter. Mix and add sugar and make the base for the cheesecake.
  2. Mix cream cheese and icing sugar until it has a creamy consistency. 
  3. Add sour cream and gelatin mix using an electric mixer.
  4. Whip the fresh cream to a soft peak and fold into cream cheese mixture. 
  5. Divide the mixture into two.
  6. Add sugar and lemon juice to the blueberries and microwave for 1 minute. Make into a jam.
  7. Fold blueberry mixture into one half of the cream cheese mixture.
  8. Pour this combined mixture on top of the biscuit layer. Smooth the top with a palette knife and place in refrigerator for at least 1 hour.
  9. After, pour the remaining half of the cream cheese mixture, smoothen it out and refrigerate for at least 2 hours.
