Originating in Singapore this famous Prawn Dish is on every menu in any seafood restaurant there. If you’ve ever tried it then you know how addictive it is, and if you haven’t then its time to find out!
Ingredients:
500g Large-Medium Prawns Cleaned
1 Egg beaten
2 tbsp Rice Flour
2 tbsp Chopped Garlic
20 Curry Leaves
6-8 Dried Red Chilies whole
1-2 Thai Green Chilies Chopped in rounds
1/2 tsp Ground Black Pepper
2 cups Cereal- ( 3/4 cup Nestum mixed with 1 tbsp. Oats or roughly ground 3/4 cup Cheerios/Cornflakes mixed with 1 tbsp. Oats)
5 tbsp. Butter divided
1/2 tbsp Vegetable Oil
Salt to taste
Method:
Clean prawns well. Dry thoroughly on a paper towel. Sprinkle some salt and mix in. Beat the egg and put the prawns in. Mix. Toss these prawns in rice flour until coated well.
In a frying pan put in 2 1/2 tbsp of butter and the oil. When sizzling sprinkle some salt and put in prawns to cook until golden and lightly cooked through.
In a wok, heat the remaining butter and put in chopped garlic. Sprinkle in some salt. Toss until the garlic is golden. Now add red chilies, curry leaves and green chili rings and toss on high heat. After a minute add the cereal mix and then the prawns. Coat the prawns with this mix and toss for another minute until cereal is golden brown. Add the ground black pepper and toss through. Serve immediately.
