Cooking with Aunty D.
Why go for your typical butter cake or chocolate cake when you can enjoy a delicious Pol Cake! It’s full of Lankan flavours and is a delight for your palette! Get baking!
Ingredients:
- Grated Coconut 500 g
- Flour 150 g
- Treacle 2 cups
- Sugar 100 g
- Vanilla 2 tsp
- Margarine 200 g
- Roasted Cumin
- Cardamom (optional)
- Cashews
- Baking powder 2 tsp
- Baking soda 1/2 tsp
Method:
- Make panipol using grated coconut, treacle and sugar.
- When the panipol is cooked, remove from the cooker and allow it to cool.
- Add margarine, flour, baking powder and baking soda to the panipol and mix until there are no lumps.
- Pour this mixture into the baking tray and bake for 1 hour (gas mark 4).
