Brinjal Curry

This brinjal curry is sure to make your lunch a whole lot better! Get cooking!

Ingredients:

  • Brinjal 500 g
  • Green chillies 5
  • Capsicum 2
  • Oil 1 tsp
  • Onion (large) 1
  • Curry leaves & rampa
  • Ginger 1/2 tsp
  • Garlic 1/2 tsp
  • Turmeric powder 1/4 tsp
  • Curry powder 1 tsp
  • Chilli powder 1 tsp
  • Salt 1/2 tsp
  • Sugar 1/2 tbsp
  • Vinegar 1 tsp
  • Thick coconut milk 1/2 cup

Method:

  1. Clean and cut brinjal. Heat oil and fry them until golden brown.
  2. Heat a teaspoon of oil in another saucepan and add onion, curry leaves & rampa, ginger, garlic and turmeric powder and mix well.
  3. Add fried brinjal, curry powder, chilli powder, salt, sugar and vinegar.
  4. Finally add thick coconut milk and cook on a low flame for 3-4 minutes.
