This brinjal curry is sure to make your lunch a whole lot better! Get cooking!
Ingredients:
- Brinjal 500 g
- Green chillies 5
- Capsicum 2
- Oil 1 tsp
- Onion (large) 1
- Curry leaves & rampa
- Ginger 1/2 tsp
- Garlic 1/2 tsp
- Turmeric powder 1/4 tsp
- Curry powder 1 tsp
- Chilli powder 1 tsp
- Salt 1/2 tsp
- Sugar 1/2 tbsp
- Vinegar 1 tsp
- Thick coconut milk 1/2 cup
Method:
- Clean and cut brinjal. Heat oil and fry them until golden brown.
- Heat a teaspoon of oil in another saucepan and add onion, curry leaves & rampa, ginger, garlic and turmeric powder and mix well.
- Add fried brinjal, curry powder, chilli powder, salt, sugar and vinegar.
- Finally add thick coconut milk and cook on a low flame for 3-4 minutes.
