Cooking with Aunty D.


Brinjal is an always welcome dish when eating rice and curry. It’s a delicious accompaniment and not difficult to make. So get cooking!

Ingredients:

  • Brinjal 500g
  • Green chillies 8
  • Curry leaves
  • Vinegar 2 tbsp
  • Ginger 1 tsp
  • Garlic 1 1/2 tsp
  • Chilli flakes 2 1/2 tsp
  • Salt 1 1/12 tsp
  • Sugar 2 tsp
  • Onion (Big) 1
  • Fortune Vegetable Oil

Method:

  1. Wash and cut brinjal into small cubes.
  2. Fry cut brinjal in Fortune Vegetable Oil until golden brown.
  3. Fry green chillies and curry leaves.
  4. Add vinegar to pan. Add ginger, garlic, chilli flakes, salt and sugar.
  5. Add diced onion.
  6. Cook for 1-2 minutes.
  7. Add fried brinjal, green chillies and curry leaves.
  8. Cook for 1 minute.
