Cooking with Aunty D.
Brinjal is an always welcome dish when eating rice and curry. It’s a delicious accompaniment and not difficult to make. So get cooking!
Ingredients:
- Brinjal 500g
- Green chillies 8
- Curry leaves
- Vinegar 2 tbsp
- Ginger 1 tsp
- Garlic 1 1/2 tsp
- Chilli flakes 2 1/2 tsp
- Salt 1 1/12 tsp
- Sugar 2 tsp
- Onion (Big) 1
- Fortune Vegetable Oil
Method:
- Wash and cut brinjal into small cubes.
- Fry cut brinjal in Fortune Vegetable Oil until golden brown.
- Fry green chillies and curry leaves.
- Add vinegar to pan. Add ginger, garlic, chilli flakes, salt and sugar.
- Add diced onion.
- Cook for 1-2 minutes.
- Add fried brinjal, green chillies and curry leaves.
- Cook for 1 minute.
