Pol roti is an absolute Lankan favourite. Here’s a simple recipe to make pol roti which is both delicious and healthy!
Ingredients:
- Whole grain wheat flour 200g
- Scraped coconut 100g
- Salt ½ tsp
- Onion 1 medium
- Green chilies 2
- Curry leaves (optional)
- Water
- Margarine or butter 2 tsp (optional)
Method:
1. Add scraped coconut and salt to the wheat flour and mix well.
2. Then add the onion, green chilies, curry leaves, and water. Knead it well.
3. Optional: add 2 tsp of butter/margarine to roti dough, and subsequently reduce the amount of water used.
4. Knead into small balls and flatter into circular shape.
5. Heat a saucepan or roti pan, and place the roti on it.
6. Cook under medium flame until both sides are cooked.
