Baked Zeppole- Italian Doughnuts with Lindt Excellence: Touch of Sea Salt Creme

Craving for doughnuts, but don’t want to have the same old thing? Here’s how you can make fancy and delicious Zeppole, which are Italian doughnuts!  Get baking!

Ingredients:

For the Zeppole –

  • Water 90 g
  • Unsalted butter 80 g
  • Pinch of sugar
  • Pinch of salt
  • Plain flour 100 g
  • Eggs 3
  • Brown sugar 15 g
  • Little raw sugar

For the Creme –

  • Milk 250 ml
  • Raw caster sugar 100 g
  • Egg yolk
  • Corn flour 25 g
  • Vanilla
  • Lindt Excellence A Touch of Sea Salt (chopped) 130 g
  • Butter 20 g
  • Little raw sugar

Method- Zeppole:

  1. Place water and butter. Bring it to boil.
  2. Add pinches of salt and sugar.
  3. Add flour and stir until well combined. Place over low heat and cook for 1-2 minutes. 
  4. Let the mixture cool down and add eggs gradually and beat. Then mix in the brown sugar.
  5. Using a star nozzle, pipe circles into a baking paper lined tray.
  6. Bake at 210° for 15 minutes and then lower the temperature to 180° and bake until golden brown.

Method- Creme:

  1. Add milk and half of the sugar to a saucepan. 
  2. In the meantime, combine egg yolks, corn flour, vanilla and the remaining sugar.
  3. Add egg yolk mix to the hot milk.
  4. Whisk and return to the heat. Cook to a thick custard and add chopped chocolate and butter. Mix until smooth and silky.
  5. Fill the top of each Zeppole with this chocolate mixture.
