Cooking with Aunty D.
Lankan cuisine is one of a kind and so flavoursome. Moreover, our chicken curries are renowned and much loved around the world. Here’s how you can make a Lankan Chicken Curry! Get cooking!
Ingredients:
- Chicken 1 kg
- Chilli powder 3 tsp
- Curry powder 1 tsp
- Pepper 1 1/2 tsp
- Salt 2 tsp
- Vinegar 3 tsp
- Garlic 5 cloves
- Ginger 1 inch
- Cardamom 3
- Cloves 3
- Onion (small) 1
- Cinnamon 1 inch stick
- Green chilli 2
- Thick coconut milk 2 cups
- Curry leaves
- Rampe
- Lemon grass
- Kalu Kudu (Roasted Curry Powder) 1 1/2 tsp
- Oil 3 tsp
Method:
- Clean and cut the chicken.
- Add chilli powder, curry powder, pepper, salt and vinegar.
- Finely chop garlic, ginger, cardamom and cloves.
- Add this to the chicken. Marinate the chicken for 30 minutes.
- Heat oil, add onion, curry leaves, rampe, lemon grass and cinnamon stick. Add chicken and cook for 5-7 minutes on low heat.
- Add thick coconut milk and cook.
- Finally, add kalu kudu and roasted mustard powder.
