Roasted Coconut Fish Curry

Sri Lankan curries are as versatile and delicious as ever. Here’s a new fish curry recipe you simply have to try out!

Ingredients:

Fish 500g
Coconut 1 tsp (grated)
Cumin ½ tsp + ¼ tsp
Fennel ¼ tsp
Oil 1 tsp
Mustard ¼ tsp
Fenugreek ¼ tsp
Onion 1 small
Cinnamon 1 stick
Ginger & garlic 1 tsp
Curry leaves and rampa
Green chili 2 nos
Turmeric ¼ tsp
Chili powder 1 tsp
Tomatoes 2 nos
Tamarind juice 2 tsp
Salt ½ tsp
Water 1 cup
Coriander leaves 50g

Recipe:

1. Heat a saucepan and roast cumin and fennel seeds; then grind it
2. Blend tomatoes and keep aside
3. Roast scraped coconut and grind it
4. Heat oil in a pan. Then add mustard seeds, cumin seeds, and fenugreek seeds
5. Then add a small onion and cinnamon, ginger & garlic, curry leaves and rampa, green chili, turmeric powder, chili powder, tamarind juice, roasted fennel, and cumin powder
6. Add salt and one cup of water, allowing it to boil
