Sri Lankan Achcharu

Ingredients:

  • Oil 2 tbsp
  • Boiled Water 3 cups
  • Vinegar 1 cup + 1/2 cup
  • Small Red Onions 250g
  • Large onion (Cubed) 1
  • Carrots 150g
  • Pepper 1 tsp
  • Turmeric Powder 1/4 tsp
  • Green Chilli 250g
  • Capsicum 150g
  • Raw Papaya 100g
  • Salt 1/2 cup + 2 tbsp
  • Mustard Powder
  • Garlic 3 cloves

Method:

  1. Boil water and add 1 cup vinegar. The add 1/2 cup salt and let it boil. mix for 1 minute.
  2. Add green chillies, capsicum and raw papaya to the boiling water and keep for 2-3 minutes. 
  3. Put small red onions, large onion (cubed) and carrots to the strainer and pour boiled chillies o top of the onions.
  4. In a separate clay pot, mix vinegar, salt, raw mustard powder, pepper, turmeric powder, ginger and garlic. Mix well and add correct seasoning. Then add boiled ingredients(let the dry completely for 15-30 minutes) to the vinegar mixture and mix well using a wooden/plastic spoon. Marinate it overnight.
