Cooking with Aunty D.
A fish curry with a truly exotic Lankan twist. Fish Ambulthiyal is a recipe from the villages that dates back to decades. The black curry fish is the cherry on top on any Sri Lankan family lunch or dinner.
Prep time: 2 hours
Ingredients:
- Fish 500g
- Black Pepper 5tsp
- Garcinia (Goraka) 5pcs
- Clove 3pcs
- Cardamom 3
- Garlic 5 cloves
- Ginger ½ inch
- Water 3 cups
- Curry Leaves
- Pandan Leaves (Rampa)
Method:
- Blend the goraka, black pepper, cardamom, garlic, clove, ginger and 1/2 the curry leaves with 1 cup of water.
- Place the pieces of fish in a clay pot.
- Add in the blended spices.
- Add 2 cups of water.
- Allow it to boil.
- Reduce the flame and close it with a lid.
Cook until the gravy thickens and eventually simmers down.
