Ingredients:

  • 10 large prawns (deveined)
  • 200g Fondré fat spread
  • 2 tbsp finely chopped garlic
  • 1 tbsp finely chopped onion
  • a sprig of curry leaves (chopped)
  • 1 tbsp ground curry powder
  • 1 ½ tsp chilli powder
  • 1 tsp chilli flakes
  • 1/4 cup soy sauce
  • curry leaves and chilli for garnish

Method:

  1. Devein and rinse the prawns thoroughly and drain off any excess water.
  2. Heat a small saucepan over medium heat.
  3. Add 150g of Fondré fat spread, garlic, onion and curry leaves. Stir well and let the ingredients cook together for about 5 minutes, until the garlic and onion are softened and cooked through.
  4. Add the curry powder, chilli powder, chilli flakes and soy sauce and mix everything thoroughly.
  5. Turn off the heat and add the remaining 50g of Fondré fat spread. Stir continuously until it melts completely into the sauce.
  6. Stir until the sauce is smooth and emulsified.
  7. Place the prawns on a baking sheet in a single layer.
  8. Pour the prepared sauce over the prawns. Spread it evenly to ensure all the prawns are coated with the flavourful mixture.
  9. Bake in a preheated oven at 250°C for 10 minutes, until the prawns are cooked through.
  10. Garnish with sliced chilli and fried curry leaves.

Baked in a delicious garlic and spice sauce and topped with chilli and crispy curry leaves, these prawns are guaranteed to make your next meal extra special.
