Ingredients:
Filling:
- 1 packet Fortune Soya Meat
- Potatoes 2 medium
- Large onion 1
- Green chilies 2
- Ginger-garlic paste 1 tsp
- 1-2 sprigs curry leaves and a piece of rampe
- 1 tsp chilli flakes
- The curry mix from the Fortune Soya Meat Packet
- 1 tsp turmeric powder
- 1 tsp pepper powder
- Salt to taste
- Lime to taste
- 1 tbsp oil (for sautéing)
- Oil for frying
Flour batter:
- 5 tbsp of all purpose flour
- ¼ tsp turmeric powder
- ½ tsp salt
Preparing the Soy Meat –
- Soak the fortune soy meat in 1 cup of boiling water for 10–15 minutes, or until softened. Drain well and squeeze out as much excess water as possible.
- Finely chop the soy meat or pulse it in a food processor until it resembles minced meat.
- Boil the potatoes until tender, then mash and set aside.
Making the Filling –
- Heat 1 tbsp of oil in a pan over medium heat. Add the onions, ginger, garlic, green chillies, curry leaves, and rampe. Cook until the onions are soft.
- Add the chopped soy meat, followed by the turmeric, the Fortune Soy Meat curry mix packet, chilli flakes, pepper, and salt. Stir well and cook for 3–5 minutes to allow the soy to absorb the spices.
- Add the mashed potatoes and mix until well combined. Stir in the lime juice, then remove the pan from the heat and let the mixture cool slightly.
- Take small portions of the mixture and roll them into firm, even-sized balls.
Preparing the Batter –
- In a bowl, combine the flour, turmeric, salt and water to make a smooth, thin batter.
- Place the breadcrumbs in a separate bowl.
- Dip each soya ball into the batter and roll it in the breadcrumbs until evenly coated.
- Repeat with the remaining balls.
Frying –
- Heat oil over medium heat.
- Deep-fry the balls in batches until golden brown and crisp.
These Soy Meat Cutlets are best enjoyed hot with your favourite tomato sauce, the OG Sri Lankan way. Make a batch for your next gathering and watch them disappear right in front of your eyes.
