Cooking with Aunty D.
Pani pol pancakes are a Lankan delight. These fun and colourful ones are sure to make your kids go absolutely crazy. It’s not your average pani pol pancake either, it’s got a fun twist to it!
Prep time: 45 min
Ingredients:
- American Flour 500g
- Egg 1
- Water 3 ½ cups
- Salt ¾ tsp
- Vanilla 1tsp
For the filling;
- Coconut 2 cups
- Honey 1 cup
- Sugar ½ cup
Method:
- Mix the egg, salt and flour into a smooth dough.
- Add vanilla essence into it.
- Gradually add water and beat it.
- Divide it into two bowls and add a pinch of food colouring into each.
- Heat up a saucepan to cook the pancakes.
- For the pani pol, combine coconut, honey and sugar and cook it into a mixture.
- Place the pani pol inside and roll it in.
