Ingredients:
Snake Gourd 500 g
Fenugreek 1/2 tsp
Garlic 10 cloves
Big Onion 1 small
Green Chilli 2 nos
Turmeric 1/2 tsp
Curry Powder (Unroasted) 1 tsp
Salt 3/4 tsp
Curry Leaves + Rampe
Coconut Milk (Thin) 1/2 cup
Red Onion 8 nos
Ground Mustard 1/2 tsp
Coconut Milk (Thick) 1 cup
Method:
In a pot, add some snake gourd, fenugreek, garlic, big onion, green chilli, turmeric, unroasted curry powder, salt and curry leaves + rampe.
Next, pour in thin coconut milk into the pot and give it a good mix before letting it cook.
Once the curry begins to bubble, add some chopped big onion, ground mustard before mixing it once again.
Proceed to pour thick coconut milk and give it a good mix before letting it cook.
Finally, garnish the curry with some chopped red chilli, for extra spice.
