Bring back those cosy family evenings with a hearty plate of String Hopper Kottu. It is comfort food at its best, rich and flavourful and made for sharing. The kind of meal that gets everyone talking, laughing and reaching for seconds. Once you dig in, stopping is impossible.
Ingredients
For the curry:
Fortune Devilled Chicken Flavour Soya 1 pkt
Boiling water to cover the soya
Salt 1 tsp
Add devilled soya spices mixture
Oil 1 tbsp
Ginger + garlic 1 tbsp
Curry leaves
Rampe
Onion 1 nos medium
Green chilli 3 nos
Soy sauce 1 tbsp
Tomato 1 nos large
Thick coconut milk
For the string hopper kottu:
Oil 1 tbsp
Ginger 1 /2 tsp
Garlic 1 tsp
Curry leaves
Rampe
Onion (1 large)
Eggs 2 nos
Pepper 1/2 tsp
Salt 1/2 tsp
Leeks 1 cup
Carrot 1 cup
String hoppers (25 nos)
Cooked Fortune soya devilled flavored curry – mix well
Method
The perfect dish for a weekend dinner.
Start by slicing onion, green chillies and tomatoes.
And then thinly slice some leeks and carrot.
Next cut up some capsicum and chop your garlic and ginger.
To make the soya curry, in a bowl add the fortune soya, boiling water, salt and let them soak.
To the strained soya chunks, add the Fortune Devilled Chicken Flavour spices and mix well.
In a pot, heat some oil.
To that add ginger and garlic, rampe, curry leaves,onion, green chillies and mix well.
To that add the seasoned Fortune soya chunks, tomatoes and mix well.
Add thick coconut milk and cook everything well.
In a wok or a pan, heat some oil.
To that add ginger, garlic, curry leaves, rampe, onion and mix well.
Push that mix to the side and put two eggs into the pan.
Season the eggs with salt and pepper and scramble them.
To that add leeks and carrots and mix again.
Next add the soya meat curry we made before.
Add chopped up string hoppers and give it a good mix.
