A traditional Sri Lankan curry with the perfect twist! Check out our Brinjal with Katta Karawala recipe below!
Ingredients:
- Brinjal 300g
- Katta Karawala 150g (or any other dry fish)
- Onion 1 medium
- Turmeric powder ¼ tsp
- Chili powder 1 ¼ tsp
- Curry powder ½ tsp
- Green chilies 3
- Tamarind juice/paste ½ tsp
- Coconut milk 1 cup
- Oil 2 tbsp
- Curry leaves and rampa
- Salt 1 tsp
Method:
- Heat oil and add katta karawala (Dry fish). Fry this for 2 – 3 minutes.
- Then add curry leaves or rampa, turmeric powder, green chilies, onions, brinjal, chili powder, curry powder, salt, and tamarind juice.
- Mix well and close the lid. Leave this to cook for 5 – 8 minutes.
- Then add coconut milk. Close the lid and allow this to cook under a slow flame.
