Ingredients
Pineapple 1 nos
Chilli Powder 1 tsp
Curry Powder (unroasted) 1 tsp
Pepper 3/4 tsp
Salt 1 1/2 tsp
Turmeric 1/2 tsp
Oil 1 tbsp
Mustard Seeds 1 tsp
Cinnamon Stick 1 inch
Cardamom 3 nos
Garlic Cloves 3 nos
Small Red Onion (Shallots) 3 nos
Green and Red Chillis 5 nos
Curry Leaves
Pandan Leaves
Water 1 1/2 cups
Coconut Milk 1 cup
Sugar 1 tbsp
Method
Peel the pineapple and cut it into slices and then into quarters.
Add chilli powder, pepper, curry powder (unroasted), salt and turmeric. Give it a good stir and let it rest for 10 minutes so it can soak in the spices.
Next thinly slice the shallots, garlic cloves and the green and red chillis.
Heat up oil in a pot and add mustard seeds, a cinnamon stick, cardomom, sliced garlic cloves, shallots, green and red chillis, curry leaves and pandan leaves. Give it a good mix.
Then add the pineapple pieces, pour in water and let it simmer.
Finally add in the coconut milk and some sugar.
Pair it with a warm plate of rice and enjoy!
