Hearty, comforting, and full of bold Lankan flavours, this Soya Curry will soon be your go to milk rice accompaniment.
Ingredients:
To soak the Soya:
Fortune chicken soya 90g
Hot water: 1 ½ cup
Salt 1/2 tsp
To cook the soaked Soya:
Oil 1 tbsp
Big onion 1 nos medium
Ginger 1 tbsp
Garlic 1 tbsp
Curry leaves
Rampe
Tomato 2 nos medium
Green chilli 5 nos
Potato 1 nos medium
Turmeric 1/2 tsp
Salt 1 tsp
Fortune chicken curry mix
Capsicum 1 nos large
Thick coconut milk 1 cup
Method:
Slice an onion, slit several green chillies, and cut the capsicum diagonally. Chop the garlic and ginger, then cut the tomatoes into pieces and the potatoes into chunks.
Put Fortune Soya into a bowl, add a little salt and warm water, and let it soak for a few minutes, then heat some oil in a pot.
Add the onion, garlic, ginger, chopped rampe, curry leaves, tomatoes, green chillies, and the potato. Sprinkle in turmeric, salt, and Fortune curry powder and mix well.
Add the soaked soya into the pot and stir it through and toss in the capsicum and pour in thick coconut milk. Let the curry simmer until it reduces and thickens nicely. Stir well once more and serve hot.
