Cooking with Aunty D.
Christmas Cake is one of the best parts of Christmas. Here’s how you can make this delight! Get baking!
Ingredients:
- Sulthanas 200 g
- Raisins 200 g
- Ginger preserve 100 g
- Currants 150 g
- Cherries (USA) 200 g
- Almonds 250 g
- Lurpak Butter 150 g
- Chow chow 150 g
- Orange Rind
- Ginger Preserve 100g
- Strawberry jam 1/2 bottle
- Mixed peels 100 g
- Egg yolks 6
- Egg whites 3
- Golden syrup 2 tsp
- Semolina 200 g
- Sugar (soft) 150 g
- Pumpkin preserve 150 g
- Vanilla essence 2 tsp
- Almond essence 1 tsp
- Brandy 1/2 cup
- Mixed spices 1 tsp
Method:
- Cut all the dried fruits into small pieces and add brandy, jam and golden syrup.
- Keep 12 hours or overnight to marinate.
- Mix Lurpak butter and sugar until creamy and gradually add the eggs whites. Then add egg yolks one by one.
- Then add mixed spices, almond essence, vanilla essence and semolina.
- Add marinated fruits to the semolina.
- Bake for 4 hours at 160°C.
- Apply brandy to baked Christmas cake.
