Ingredients:
All-Purpose Flour 2 cups
Salt 1 1/4 tsp
Cornflour 2 tsp
Water 1 1/4 cups
Oil 1 tbsp
Garlic 2 cloves
Bombay Onion 1 medium
Curry leaves
Ginger 1/2 tsp
Chilli powder 1 tsp
Boiled fish 200g
Boiled potatoes 300g
Green chilli 2 nos
Chilli flakes 1 1/2 tsp
Pepper 1/2 tsp
Lime juice 1/4 tsp
Bread Crumbs
Eggs (For batter)
Boiled eggs (Depends on the number of rolls)
Oil (To fry)
Method:
Add all-purpose flour followed by salt, cornflour and water into a bowl, and mix well into a paste. Let it rest for 10 minutes.
Add oil into a pan followed by, garlic, bombay onion, curry leaves, ginger and mix well.
Next, add chilli powder, boiled fish, boiled potatoes, green chillis, chilli flakes, pepper, salt, lime juice and mix well. Remove from heat once fully cooked.
Next, add the flour paste into a pan and spread evenly. Remove the paste sheet from the pan, add the already prepared fish and potatoes mix into the sheet together with half a boiled egg and roll into the required shape.
Dip the egg roll into the mixture of egg batter and then dip into a bowl of bread crumbs.
Finally, add oil into a pan and shallow fry the egg rolls until golden brown. Remove from the pan once done.
