This easy and quick recipe will never again make you want to make a box macaroni and cheese! This recipe is altered to suit our Sri Lankan palette. Comment below if you have any questions. Prep time: 20 min

Makes: 4 servings

Ingredients:

  • Uncooked elbow macaroni 100g
  • Butter/Margarine 25g
  • Milk 2 cups
  • All-purpose flour 40g
  • Bay leaves 2
  • Pasta sauce of your choice 1tbsp
  • Processed cheese 2 pieces
  • Tomato paste 1tbsp
  • Grated Mozzarella Cheese 100g

Method:

  1. Plunge the uncooked macaroni into a saucepan containing plenty of boiling salt water.
  2. Allow it to boil gently and stir occasionally with a wooden spoon.
  3. Cook for approx. 15 min and drain well.
  4. Melt butter or margarine in a skillet over medium heat. Mix with flour to make the white roux. Add milk little by little and whisk or use a wooden spoon to mix it to make sure it doesn’t get lumpy.
  5. Add tomato paste and pasta sauce to the white roux followed by two pieces of processed cheese, pepper and bay leaves.
  6. Add the boiled macaroni to the skillet and mix well to properly infuse the sauce.
  7. Correct the seasoning.
  8. Add the grated mozzarella to the hot macaroni and mix well.
  9. Switch off the stove. Serve.
