Rudolph’s Pie | Cooking with Aunty D

This Rudolph’s pie is comfort food at its best!

Packed with tender ground meat, vegetables and finished off with a crispy, golden top, this dish will definitely be the star at your Christmas dinner table. 

Try out this festive take on Shepherd’s pie with Aunty D!

Ingredients

  • Oil 1 tbsp
  • Minced ginger 1 tbsp
  • Minced meat (chicken, beef or lamb) 750 g
  • Pepper 1 ¾ tsp
  • Garlic powder 1 tbsp
  • Salt 2 ½ tsp
  • Worcestershire sauce 1 tbsp
  • Tomato sauce 2 tbsp
  • Curry powder ½ tbsp
  • All-purpose flour ¼ cup
  • Chicken stock ½ cup
  • Corn ½ cup
  • Green peas ¼ cup
  • Lime juice 1 tsp
  • Boiled potatoes 250 g
  • Butter 1 tbsp

Method.

Heat oil in a pot and sauté minced ginger until fragrant.

Add minced meat, pepper, garlic powder, salt, Worcestershire sauce, tomato sauce and curry powder. Cook thoroughly until the meat browns.

Sprinkle flour over the mixture and stir until combined. Gradually add chicken stock while mixing to create a thick, flavourful sauce.

Toss in green peas and corn, then add lime juice. Stir well and remove from heat.

Mash boiled potatoes with butter, pepper and salt until smooth.

Spoon the meat mixture into a baking dish, spreading it evenly. Then, layer the mashed potatoes on top.

Finally, bake in a preheated oven at 200°C for 10-12 minutes or until the top turns golden brown.
