Christmas Jewelled Rice | Cooking w Aunty D

Add a touch of festive flair to your Christmas feast with this delicious jewelled rice! Packed with bold flavours and colourful veggies, this dish is going to steal the spotlight at your Christmas table.

Ingredients

For the rice
Fondré fat spread 2 tbsp
Onion 1 medium
Garlic 2 tbsp
Italian mixed herbs 1 tsp
Chilli flakes 1 tsp
Bouillon powder 2 tbsp
Salt 1/2 tsp 
Washed rice 2 cups
Water 2 cups 

For the vegetable mix

Fondre 1 tbsp
Red bell pepper 1 nos
Green bell pepper 1 nos
Pepper 1/2 tsp
Salt 1/2 tsp
Bouillon powder 2 tbsp

Method

In a saucepan, melt some Fondré fat spread.

Once melted, add the chopped onion and garlic, Italian mixed herbs, chilli flakes, bouillon powder, salt and sauté for some time.

Add the washed rice to the mixture and stir again.

Add water to the rice mixture and cover with a lid.

Cook the rice until all the water has been absorbed and the rice is fluffy.

In a separate pan, melt some Fondré fat spread.

Add the chopped green and red bell peppers to the pan, along with pepper, salt and bouillon powder. 

Sauté for a few minutes and take off the heat.

Add the sautéed bell peppers to the rice and mix them together gently.

Serve this jewelled rice alongside your favourite holiday dishes or enjoy it as a light main course. It is sure to be a hit with everyone at the table!
