Mushroom and Veg French Toast

Breakfast in bed anyone?

Ingredients:

2 eggs

Some milk (low fat or full fat/long life/fresh)

Butter

Mushrooms (canned ones work just as well, but fresh is always nicer) chop them thin. About 2 should be enough for 2 slices of bread.

1/4 strip green bell pepper finely diced

1/4 tomato finely diced

1/4 onion finely chopped

Cheese (any cheese you have, mozzarella, cut cheese slices into strips or grated hard cheese)

Green chili if desired

Salt and pepper to taste

 

Method:

Beat eggs well. Add some milk, about 3 tablespoons. The mix shouldn’t be eggy yellow anymore after this is beaten. Add some salt and pepper and the other ingredients. Beat well. Now soak the bread slices in it for 2-3 minutes. Turn and soak both sides very well but don’t over soak and break the bread.

Heat pan and add butter to your liking (I added quite a bit!) about 1 1/2 tbsp. for 2 slices of bread as it helps the side with the mix ease off the pan well.

Gently lower bread into pan. Now heap the egg mix with a spoon on top of the bread. Don’t over heap or when you turn over everything will fall off. Cook on low heat for 2 minutes or until golden. Now gently turn without spilling the mix. Cook for 1 1/2 minutes then flip over and toss cheese. Let the cheese melt for a few seconds and transfer to plate

Serve hot.
