Tempered Cashew Curry

Try out our delicious cashew curry recipe below, in three simple steps!

Ingredients:

  • Cashew 350g
  • Red onions 6
  • Green chilies 2
  • Chili flakes 1 ½ tsp
  • Chili powder ½ tsp
  • Curry powder ¼ tsp
  • Salt ¼ tsp and ½ tsp
  • Turmeric Powder ¼ tsp
  • Curry leaves/rampa
  • Fortune Sunflower Oil 3 tsp
  • Coconut milk ½ cup
  • Water

Method:

1. Firstly, boil the cashews, adding turmeric and salt. If the cashews are dry, soak them overnight
2. Heat Fortune Sunflower oil and add red onions, curry leaves, and boiled cashew nuts.
3. Then add green chilies, chili flakes, chili powder, curry powder, salt, and coconut milk. Cover the lid and cook under a low flame

Optional: add garlic and maldive fish to the oil for flavour
