Boondi

Crispy, sweet and irresistibly delicious, this homemade boondi is a perfect treat for any occasion. Made with light, airy dough and soaked in a sweet sugar syrup, every bite is packed with flavour.

Ingredients:

  • All purpose flour 2 cups
  • Yeast  1 tsp
  • Salt  1 tsp
  • Red Food colouring   1 tsp
  • Water as required
  • Sugar  400 g
  • Water 200 ml
  • Lime juice  2 tsp
  • Fortune cooking oil 400 ml

Method

Sugar syrup

  1. In a saucepan, combine the sugar and water over medium heat. 
  2. Stir gently until the sugar has completely dissolved. 
  3. Allow the mixture to come to a gentle boil and simmer for a few minutes until it becomes slightly syrupy. 
  4. Add the lime juice and mix well. 
  5. The lime juice helps prevent the syrup from crystallizing and gives it a light, fresh flavour. 
  6. Keep the syrup warm while preparing the boondi.

Dough Preparation

  1. In a large mixing bowl, add the flour, yeast, and salt. 
  2. Mix well to evenly combine all the dry ingredients.
  3. Add a few drops of food colouring and stir until the colour is evenly distributed throughout the mixture.
  4. Gradually pour in the water, a little at a time, while mixing continuously. 
  5. Continue until a smooth, sticky batter-like dough forms. 
  6. The consistency should be thick enough to pipe but still soft and slightly runny.
  7. Cover the bowl with a clean cloth or plastic wrap and let it rest in a warm place for about 30 minutes. 
  8. During this time, the yeast will activate and the dough will rise slightly, making the boondi light and airy.
  9. Once the dough has risen, transfer it into a piping bag fitted with a small round tip, or simply snip a small hole at the end of the bag.
  10. Heat Fortune cooking oil in a deep frying pan over medium heat. 
  11. Carefully pipe small drops of the dough directly into the hot oil. 
  12. Fry in batches, stirring gently, until the boondi pieces turn crispy.
  13. Remove the fried boondi from the oil and immediately place them into the warm sugar syrup. 
  14. Allow them to soak for about 1 minute so they absorb the sweetness while still remaining slightly crisp.
  15. Finally, remove the boondi from the syrup and transfer them to a serving bowl. 
  16. Let them cool slightly before serving.
