Ingredients:
Semolina 225 g
Butter 225 g
Minced Cashews 225 g
Soft Sugar 400 g
Pumpkin Preserve 150 g
Eggs 10 nos
Lime 3 rinds
Rose Essence 2 tsp
Almond Essence 2-3 tsp
Vanilla Essence 3 tsp
Method:
First, mix butter and semolina to combine well.
Add grinded rind of limes.
In a separate bowl, add pumpkin preserves, minced cashews, rose essence and mix well.
Next, blend 10 eggs together and proceed to add soft sugar before blending again.
Continue to add almond essence and vanilla essence to the egg mix and blend.
Proceed to transfer the semolina mixture and blend it all together.
Next, add the pumpkin mixture and mix which is soon followed by beaten eggs.
Give it one final mix.
Transfer the batter to a lined baking tray.
Bake at 150c for 60 minutes and enjoy!
