Milk Chocolate Nut Cookies

Ingredients:

  • Lurpak Butter 170 g
  • Lindt Excellence Extra Creamy Milk Chocolate (chopped) 100 g
  • Sugar 150 g
  • Maple syrup 2 tbsp
  • Vanilla extract 2 tbsp
  • Egg 1
  • All purpose flour 300 g
  • Baking powder 1/2 tsp
  • Salt 1/4 tsp
  • Chopped cashew nuts or almonds 30 g

Method:

  1. Beat Lurpak butter and sugar until light and fluffy. Add maple syrup, vanilla extract and egg. 
  2. Whisk together flour, baking powder and salt in a separate bowl. Then stir the mixture into the butter mixture. Add nuts and chopped chocolate.
  3. Separate the dough into two portions and roll into logs. Wrap in plastic wrap and refrigerate for 6 hours.
  4. Then cut the dough into 6 mm slices and place on a baking sheet.
  5. Preheat oven to 350°F and bake for 12-15 minutes until cookies begin to turn golden brown.
