How does warm chapathi and a creamy bowl of flavourful curry sound right about now?
This traditional South Indian curry is an aromatic, delicious and lightly spiced curry made with mixed vegetables, coconut, cashews, and spices.
Here’s how you make it!
Ingredients:
For the grounded paste:
Grated Coconut ¼ cup
Gram Flour (Kadala Piti) ⅛ cup
Cashew 5 nos
Kasa Kasa ¼ tsp
Water ⅓ cup
For the curry:
Oil 1 tbsp
Bay Leaves 2 nos
Cardamom 2 nos
Cloves 2 nos
Cinnamon ½ inch
Fennel ¼ tsp
Onion 1 medium
Ginger + Garlic 1 tsp
Green Chilli 2 nos
Tomato 1 large
Turmeric ¼ tsp
Cumin Powder ½ tsp
Chilli Powder ½ tsp
Coriander Powder ½ tsp
Potato ½ cup
Carrot ½ cup
Green Beans ¼ cup
Green Peas ¼ cup
Cauliflower 1 cup
Water ½ cup
Salt ¾ tsp
Water ¼ cup
Coriander Leaves
Method:
To make the grounded paste, combine grated coconut, gram flour, cashew, kasa kasa and water in a mixer.
Heat up a pan with oil and add bay leaves, cardamom, cloves, cinnamon, fennel, onion, ginger and garlic.
Next, add green chilli and tomato and let it lightly simmer before adding the spices; turmeric, cumin powder, chilli powder and coriander powder.
Add the diced potatoes, carrot, green beans, green peas, cauliflower and water and stir to combine.
Complete the curry with salt, the grounded paste and water. Mix well and let it simmer until cooked.
Finally, mix in some finely chopped coriander leaves and your bowl of goodness is good to go!
