Jackfruit Kottu | Cooking with Aunty D

Ditch the roti, as jackfruit takes centre stage!

This jackfruit kottu is an absolute game-changer, packed with protein, flavour and is surprisingly simple to make!

Give it a go with Aunty D.

Ingredients: 

Jackfruit 500 g
Water 1 cup
Salt 1 tsp
Oil 1 tbsp
Curry leaves + rampe
Garlic + ginger 1/2 tbsp
Big onion 1 medium
Leeks 1/2 cup
Carrot 1/2 cup
Egg 2 nos
Pepper 1 tsp
Chilli flakes 1 1/2 tsp
Soy sauce 1 tbsp
Green chilli 3 nos

Method:

Cut the jackfruit into strips.

Transfer the jackfruit strips to a pot with water and salt and bring it to a boil.

Leave it on heat for another 8 – 10 minutes until the jackfruit is tender. (The time will vary depending on the ripeness of your jackfruit)

To a pan over heat, add oil curry leaves and rampe, minced garlic and ginger, and sliced onion. Sauté for a few minutes until fragrant.

Mix in chopped leeks and grated carrot to the pan. Let it cook until it’s soft.

Keep the mixture in the pan, but push it to one side then add the eggs then sprinkle pepper and chilli flakes for flavour.

Let the eggs cook before scrambling them and folding it into the vegetable mixture.

Season the mixture with more chilli flakes, soy sauce and chopped green chilli.

Add the boiled jackfruit to the pan and give it all a good stir. Let it cook for another minute or two.

Serve your Jackfruit Kottu hot!
