Add a rich, wholesome twist to your Avurudu spread with this soft, spiced Pol Cake. Moist, nutty and packed with traditional goodness!

Ingredients:
Sugar cup 1 1/2
Coconut treacle 1 cup
Water 1 cup
Ground cardamom 3 nos + cinnamon 1/4 inch
Vanilla 2 tsp
Coconut 500 g
Meadow Lea margarine 150 g
All purpose flour 250g
Dates 150 +  warm water 1/4 cup

Method:
This is going to be your go-to pol cake recipe from today.

Start by grinding some cinnamon sticks and cardamom in a mortar.  

Heat up a pot with sugar, then add coconut treacle, a bit of water, ground cinnamon and cardamom, and a splash of vanilla.  

Now add grated coconut and mix it all well.  

Drop in some Meadow Lea butter and stir until it melts in. Then add rice flour and mix again.

Now take some dates, remove the seed and chop them up.  

Add them into a separate bowl, pour a bit of water and mix well.  

Then gently mix the dates into the flour mixture.

Line a cake tray with parchment paper and pour in the mix.  

Top it off with some cashews, then pop it in the oven and bake for 30 minutes.

And just like that, you’ve got the perfect slice of homemade pol cake.
