Polos Cutlets | Cooking with Aunty D

These Polos Cutlets are delightfully crunchy and packed with flavour!

Not only are they a great vegetarian option, but they’re also perfect for sharing (or to snack on them yourself, no judgment!)

Ingredients:
Boiled polos 500 g
Boiled potatoes 200 g
Chilli flakes 1 tbsp
Pepper 1/2 tbsp
Salt 1 1/2 tsp
Lime juice 2 tsp
Big onion 1 large
Garlic 4 cloves
Green chilli 5 nos
Curry leaves
Oil 1 1/2 tbsp
Egg 1 nos
Bread crumbs

Method:

Start by cutting your polos and boiling them until tender.

Then combine mashed boiled potatoes with your polos. Add chilli flakes, pepper, salt and lime juice to the mixture for added flavour.

Finely chop onion, garlic, green chillies and curry leaves.

In a pan, sauté the chopped ingredients until they are fragrant and slightly golden.

Add the polos and potato mixture to the same pan and mix until well combined.

Next, shape the mixture into balls.

Dip each shaped cutlet into egg wash, then roll them in bread crumbs.

Carefully place the cutlets into hot oil and fry until they turn golden brown and crispy.

Once cooked, drain the excess oil from the cutlets and serve them up hot with your favourite dipping sauce or chutney!
