Cool down with a tropical twist!
With just four simple ingredients, this refreshing mangosteen ice cream is super easy to whip up!

Ingredients:
Mangosteen 10 nos
Dates 100 g
Thick coconut milk 1/2 cup
Whipping cream 1 cup
Method:
Remove the outer shell from your mangosteen, scoop out the fleshy segments into a bowl. Use a spoon or a fork to mash the fruit, separating the juice from the pulp and the seeds.
Next, for some added sweetness, finely chop dates.
Meanwhile, prepare thick coconut milk and set aside for later.
Using a hand mixer or whisk, beat whipping cream until it forms stiff peaks.
Gently add in the mangosteen juice, chopped dates and thick coconut milk into the whipped cream, give it all a good stir.
Once everything is well-combined, pour the mixture into a flat dish or an ice cream container. Smooth out the surface with a spatula and let it freeze for 4-5 hours until set.
Finally, scoop the ice cream, serve it up and enjoy your refreshing homemade mangosteen ice cream!
